The Old Cuban
- 3/4 oz. Lime Juice
- 1 oz. Superfine Sugar (or Simple Syrup)
- 6 Mint Leaves
- 1 1/2 oz. Rum (Aged)
- 2 dashes Angostura Bitters
- 2 oz. Champagne
- In a mixing glass, muddle lime juice, sugar/syrup, and mint.
- Add rum and bitters, top with ice, and shake well.
- Strain into chilled cocktail glass and top with Champagne.
- Garnish with a sugar-dried vanilla bean and mint flecks.
