Ham, Sweet Pepper, And Zucchini Soup
- 1 tablespoon butter
- 1 1/4 cups coarsely chopped zucchini
- 3/4 cup coarsely chopped yellow sweet pepper
- 2 cloves garlic, minced
- 3 14-ounce cans chicken broth
- 3 cups chopped cooked ham (1 pound)
- 2 tablespoons snipped basil
- In a large saucepan melt butter over medium heat.
- Add zucchini, sweet pepper, and garlic and cook until tender.
- Add broth and simmer, covered, for 5 minutes.
- Stir in ham.
- Heat through.
- Stir in basil.
