Turkey Meatloaf With Apples And Sage

  1. Preheat the oven to 400 F.
  2. Grease eight mini loaf pans or a small baking pan.
  3. In a medium skillet, melt the butter over medium heat.
  4. Add the garlic and shallots and cook, stirring occasionally, until the shallots are softened, about 3 minutes.
  5. In a large bowl, stir together the apple chunks, breadcrumbs and milk; allow to soak for about 5 minutes.
  6. Add turkey and mix to combine.
  7. Stir in the egg as well as the garlic and shallot mixture, being sure to scrape all the butter from the pan into the bowl.
  8. Add the apple butter, sage, salt and pepper and mix evenly.
  9. Spoon the meat mixture into the loaf pans.
  10. If not using mini loaf pans, place meat on the baking sheet and shape it into an oval.
  11. Bake for about 50 minutes, or until the internal temperature of a loaf reaches 160 F.
  12. In the last few minutes of the cooking, brush the tops with apple butter.
  13. Allow the loaves to rest for 5 minutes before serving.
