Turkey Lettuce Wraps



  1. Warm the oil in a large skillet over medium heat.
  2. Add the turkey and break it up with a spoon as it browns.
  3. When it's almost cooked through, add the peppers, green onions, garlic and ginger.
  4. Keep pushing everything around in the pan until the vegetables begin to soften.
  5. Pour in the water chestnuts, vinegar, soy sauce and Sriracha and give it all a stir.
  6. Check that the turkey has cooked through.
  7. Transfer the mixture to a serving bowl.
  8. Assemble lettuce wraps with the meat filling, whole lettuce leaves and chopped cilantro and nuts.
  9. Cup a lettuce leaf in one hand, scoop in the fillings, fold up the leaf and tuck in.
