Spiced Lentil Stew
Ingredients
- 1 medium onion, diced
- 3/4 cup dry green lentils, rinsed
- 1/2 cup dry split red lentils, rinsed
- 1 tsp molasses
- 2 tbsp olive oil
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp turmeric
- 1/2 tsp cumin
- 1/4 tsp cinnamon
- 1 pinch chili flakes
- 5 cups vegetable broth
- 1 1/2 tsp salt
- Toppings (optional) - lime juice, cilantro
Directions
- Dry cook onions over medium heat and transfer to slow cooker.
- Add lentils and molasses.
- Stir remaining ingredients except broth and salt over low heat until fragrant and transfer to slow cooker.
- Add the vegetable broth.
- Cover and cook on low for 6-8 hours or high for 2-3 hours.
- Salt to taste.
- Serve with toppings.
