Southern Ham Soup With Black-Eyed Peas And Hominy
Ingredients
- 2 tablespoons olive oil
- 1 cup chopped celery
- 1 cup chopped onion
- 3/4 cup chopped green sweet pepper
- 2 cloves garlic, minced
- 1 1/4 cups diced cooked ham
- 1 teaspoon paprika
- 1/2 teaspoon sugar
- 1/2 teaspoon dry mustard
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried basil, crushed
- 1/2 teaspoon dried oregano, crushed
- 1/2 teaspoon dried thyme, crushed
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon cayenne pepper
- 1 15.5-ounce can black-eyed peas, rinsed and drained
- 1 15.5-ounce can golden hominy, rinsed and drained
- 1 14.5-ounce can diced tomatoes, undrained
- 1 14.5-ounce can chicken broth
- 1 tablespoon snipped parsley
- 1 tablespoon mild-flavor molasses
Directions
- In a Dutch oven heat oil over medium heat.
- Add celery, onion, sweet pepper, and garlic and cook and stir for 5 minutes.
- Stir in ham, paprika, sugar, dry mustard, cumin, basil, oregano, thyme, cloves, black pepper, and cayenne pepper.
- Cook and stir for 5 minutes.
- Stir in all remaining ingredients.
- Simmer, covered, for 30 minutes.
