Shrimp And Orzo Skillet Dinner



  1. In a large skillet, warm the oil over medium heat.
  2. Add the onion and garlic and cook, stirring occasionally, until they soften.
  3. Add the oregano and cook for another minute.
  4. Pour in the stock, tomatoes with their juice and vinegar.
  5. Taste and add salt and pepper.
  6. Now stir in the orzo and allow everything to simmer for 15 minutes.
  7. Add the shrimp and cook for another 3 to 5 minutes, until the shrimp turn pink.
  8. Remove from the heat, sprinkle with basil and feta, and serve.
