Shrimp And Orzo Skillet Dinner
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1/2 tsp dried oregano
- 2 cups vegetable stock
- 1 can diced tomatoes
- 1/3 cup balsamic vinegar salt and pepper
- 1 cup orzo
- 1 lb shrimp, peeled and deveined
- big handful of fresh basil, sliced
- 1/2 cup crumbled feta cheese
Directions
- In a large skillet, warm the oil over medium heat.
- Add the onion and garlic and cook, stirring occasionally, until they soften.
- Add the oregano and cook for another minute.
- Pour in the stock, tomatoes with their juice and vinegar.
- Taste and add salt and pepper.
- Now stir in the orzo and allow everything to simmer for 15 minutes.
- Add the shrimp and cook for another 3 to 5 minutes, until the shrimp turn pink.
- Remove from the heat, sprinkle with basil and feta, and serve.
