Quinoa, Broccoli And Cheddar Frittata Slice



  1. Preheat the oven to 350 F.
  2. Lightly grease a 9-inch square cake pan.
  3. Heat the oil in a large skillet over medium-low heat.
  4. Add the onion and cook until tender, about 2 minutes.
  5. Add the broccoli and cook until crisp-tender, about 3 minutes.
  6. Remove from the heat and allow the mixture to cool a bit.
  7. In a large bowl, whisk together the eggs, milk, mustard, salt and pepper.
  8. Stir in the cheddar, 1/4 cup of the Parmesan, quinoa and the broccoli mixture.
  9. Pour the egg mixture into the cake pan.
  10. Sprinkle the remaining Parmesan over top.
  11. Bake for about 40 minutes, or until the top is golden brown and the egg is set.
  12. Let cool slightly before serving.
