Quinoa, Broccoli And Cheddar Frittata Slice
Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 1 head broccoli, thick stems removed and florets finely chopped
- 8 eggs
- 3/4 cup milk
- 1/2 tsp Dijon mustard
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup grated medium cheddar cheese
- 1/2 cup grated Parmesan cheese, divided
- 1/2 cup uncooked quinoa
Directions
- Preheat the oven to 350 F.
- Lightly grease a 9-inch square cake pan.
- Heat the oil in a large skillet over medium-low heat.
- Add the onion and cook until tender, about 2 minutes.
- Add the broccoli and cook until crisp-tender, about 3 minutes.
- Remove from the heat and allow the mixture to cool a bit.
- In a large bowl, whisk together the eggs, milk, mustard, salt and pepper.
- Stir in the cheddar, 1/4 cup of the Parmesan, quinoa and the broccoli mixture.
- Pour the egg mixture into the cake pan.
- Sprinkle the remaining Parmesan over top.
- Bake for about 40 minutes, or until the top is golden brown and the egg is set.
- Let cool slightly before serving.
