Morning Glory Muffins

Directions

  1. Preheat the oven to 350 F.
  2. Grease a 12-cup muffin tin or line with paper liners.
  3. In a bowl, toss together the grated carrots and apple.
  4. Set aside.
  5. In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, flax, baking powder, baking soda, cinnamon and salt.
  6. Add the coconut, nuts and raisins and toss well.
  7. In a small bowl, whisk together the eggs, oil and vanilla.
  8. Add the wet ingredients to the dry ingredients and stir until just combined.
  9. Stir in the grated carrots and apple.
  10. Spoon the batter into the muffin cups.
  11. Bake for 20 to 25 minutes, until a toothpick comes out clean.
  12. Turn out onto a rack to cool completely.
