Morning Glory Muffins
Ingredients
- 2 cups grated peeled carrots
- 1 cup grated peeled apple
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 3/4 cup sugar
- 1/4 cup ground flax
- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 cup unsweetened shredded coconut
- 1/2 cup chopped pecans (or walnuts or almonds or leave out altogether)
- 1/2 cup raisins
- 3 eggs
- 3/4 cup vegetable oil or melted coconut oil
- 1 tsp vanilla extract
Directions
- Preheat the oven to 350 F.
- Grease a 12-cup muffin tin or line with paper liners.
- In a bowl, toss together the grated carrots and apple.
- Set aside.
- In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, flax, baking powder, baking soda, cinnamon and salt.
- Add the coconut, nuts and raisins and toss well.
- In a small bowl, whisk together the eggs, oil and vanilla.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Stir in the grated carrots and apple.
- Spoon the batter into the muffin cups.
- Bake for 20 to 25 minutes, until a toothpick comes out clean.
- Turn out onto a rack to cool completely.
