Louisiana Chicken And Sausage Gumbo



  1. For roux, in a saucepan combine flour and oil until smooth.
  2. Cook over medium-high heat for 5 minutes, stirring constantly.
  3. Reduce heat to medium.
  4. Cook, stirring constantly, for 8 to 10 minutes.
  5. Stir in onion, sweet pepper, celery, and garlic.
  6. Cook 10 minutes, stirring frequently.
  7. Stir in Cajun seasoning.
  8. Add broth and the water.
  9. Stir in okra.
  10. Simmer, covered, for 15 minutes.
  11. Stir in chicken and sausage.
  12. Heat through.
  13. Serve gumbo in bowls over rice.
  14. Serve with hot pepper sauce.
