Lentil, Sausage And Kale Stew
- 4 cups chicken broth
- 3 cooked chicken Italian sausages, cut into bite-size pieces
- 1 cup dried lentils
- 1 onion, chopped
- 2 carrots, chopped
- 1 celery rib, chopped
- 2 cloves garlic, minced
- 2 tsp Herbs de Provence
- 2 cups kale, chopped
- Place all ingredients except kale in slow cooker.
- Cover and cook on low for 8 hours.
- Add kale and season to taste with salt and pepper.
- Cover and cook for 15 minutes.
