Lemon Cardamom Apple Cake



  1. Preheat the oven to 350 F.
  2. Butter an 11- by 7-inch glass baking dish.
  3. In a bowl, toss the apple cubes with cinnamon.
  4. Arrange them in the baking pan.
  5. Set the bowl aside.
  6. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, cardamom and salt.
  7. Using the bowl from the apples, whisk together the eggs, applesauce, lemon juice, oil and vanilla.
  8. Pour the wet ingredients into the dry and stir.
  9. Add the buttermilk and stir until just combined.
  10. Pour the batter over the apples.
  11. Bake for 35 minutes, or until a toothpick inserted in the center comes out clean.
  12. Allow to cool, then cut into squares.
