Keto Breakfast Pudding
- 1 1/2 cups full-fat coconut milk
- 1 cup frozen raspberries
- 1/4 cup MCT oil or melted coconut oil, or 1/4 cup unflavored MCT oil powder
- 1/4 cup collagen peptides or protein powder
- 2 tablespoons chia seeds
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract
- 1 tablespoon erythritol, or 4 drops liquid stevia
- Unsweetened shredded coconut
- Hulled hemp seeds
- Fresh berries of choice
- Blend all ingredients except coconut, hemp seeds and berries.
- Serve in bowls with toppings.
