Italian Sausage Soup
Ingredients
- 1 pound Italian sausage (remove casings, if present)
- 1/2 cup chopped onion
- 1 clove garlic, chopped
- 1 cup chopped carrot
- 1/2 cup chopped celery
- 1 14.5-ounce can diced tomatoes, undrained
- 1 8-ounce can tomato sauce
- 1 teaspoon dried oregano
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/4 teaspoon fennel seeds
- 1 bay leaf
- 3 14-ounce cans reduced-sodium chicken broth
- 1/2 cup dried orzo or finely broken capellini pasta
- Finely shredded Parmesan cheese (optional)
Directions
- Combine Italian sausage, onion, and garlic over medium heat.
- Cook until sausage is cooked through, breaking up sausage into bite-size pieces.
- Drain fat.
- In a slow cooker combine carrot and celery.
- Place sausage mixture on top of vegetables.
- Mix in remaining ingredients except pasta and cheese.
- Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours.
- If using low setting, turn to high setting.
- Stir in pasta.
- Cover and cook for 20 minutes.
- Discard bay leaf.
- Serve with cheese.
