Honey-Lime Gazpacho

Ingredients

Directions

  1. Combine tomatoes, cucumbers, sweet peppers, chile pepper, and garlic.
  2. Transfer the tomato mixture, half at a time, to a food processor.
  3. Cover and process with several on/off pulses to get large chunks.
  4. Return mixture to the food processor.
  5. Add remaining ingredients except ice, lime wedges and green onions.
  6. Cover and process with several on/off pulses until the mixture is a little chunky.
  7. Season to taste with additional sea salt.
  8. To serve, place 2 or 3 ice cubes in each of four bowls.
  9. Ladle soup over ice.
  10. Serve with lime wedges and green onions.
