Full Meal Deal
- 2 Mug Biscuits
- 1 large Hass avocado, peeled, pitted, and mashed
- 1 tablespoon avocado oil
- 2 cups fresh spinach
- 1/2 cup Chimichurri
- Cut the biscuits in half and set each half on a separate plate.
- Top each half with an equal portion of the mashed avocado.
- Place the oil in a frying pan over medium heat.
- Add the spinach and saute until lightly wilted for 3 minutes.
- Place the wilted spinach on top of the avocado, then drizzle each serving with 2 tablespoons of chimichurri.
