Cucumber-Yogurt-Mint Soup

Ingredients

Directions

  1. Combine all ingredients except milk and mint.
  2. Cover and process or blend until smooth.
  3. If necessary, stir in milk to reach desired consistency.
  4. Stir in 1/3 cup mint.
  5. Cover and chill for 2 to 24 hours.
  6. Stir soup before serving.
  7. Sprinkle each serving with additional snipped mint.
