Chicken Chili Monterey
Ingredients
- 1 tablespoon vegetable oil
- 1 cup chopped onion
- 1 cup coarsely chopped carrot
- 1 cup sliced celery
- 1 1/3 cups chopped tart apples
- 2 to 3 teaspoons curry powder
- 1/4 teaspoon salt
- 3 cups reduced-sodium chicken broth
- 3 cups water
- 1 14.5-ounce can low-sodium stewed tomatoes, undrained
- 2 cups chopped cooked chicken or turkey
Directions
- In a Dutch oven heat oil over medium heat.
- Add onion, carrot, and celery and cook and stir 10 minutes.
- Reduce heat to medium-low.
- Add apples, curry powder, and salt and cook, covered, for 5 minutes.
- Stir in broth, the water, and undrained tomatoes.
- Simmer, covered, for 10 minutes.
- Stir in chicken.
- Simmer, covered, for 10 minutes.
