Blueberry And Lemon Yogurt Parfaits



  1. In a medium bowl, stir together the yogurt, maple syrup, lemon zest, vanilla and ginger.
  2. Fill four parfait glasses or small jars about one-quarter of the way with blueberries.
  3. Spoon about 3 tbsp of the yogurt mixture over the berries in each glass.
  4. Sprinkle remaining berries on the yogurt.
  5. Add one last dollop of yogurt.
  6. Cover with plastic wrap and refrigerate overnight.
  7. When ready to serve, sprinkle each with granola or cereal and devour.
