Banana Muffins
Ingredients
- 1/3 cup olive oil
- 1/2 cup maple syrup or honey
- 2 eggs
- 1 cup packed mashed ripe bananas
- 1/4 cup milk
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1.75 cups flour
- 1/3 cup old-fashioned oats
- 1 teaspoon sugar
Directions
- Preheat the oven to 325 degrees Fahrenheit.
- Mix oil, syrup, eggs, bananas and milk.
- Mix in baking soda, vanilla extract, salt and cinnamon.
- Mix in flour and oats.
- Pour in muffin pan, filling each cup about two-thirds full.
- Sprinkle oats and sugar on top of muffin.
- Bake for 22 to 25 minutes.
- Freeze for up to 3 months.
