Banana Chocolate Quinoa Bars



  1. Preheat the oven to 350 F.
  2. Line a 13- by 9-inch baking pan with parchment paper, leaving some overhang on each long side to help lift bars out later.
  3. Mix the bananas, sunflower butter, brown rice syrup, maple syrup, coconut oil, cinnamon and salt until it's a creamy consistency.
  4. In a large bowl, toss together the oats, quinoa and chocolate chips.
  5. Shake the dry ingredients into the bowl of banana mixture.
  6. Stir with the mixer until everything is completely combined.
  7. Turn everything out of the bowl and into the baking pan.
  8. Spread the batter so it goes right to the edges of the pan.
  9. Smooth the top using a spatula.
  10. Bake for 40 to 45 minutes, until golden.
  11. Allow it to cool completely before applying the drizzle.
  12. In a small saucepan, heat the remaining chocolate chips and coconut oil over low heat, stirring now and then, until they melt.
  13. Pop the sauce in the fridge for a moment to firm slightly.
  14. Use a small spoon or spatula to drizzle chocolate over bars.
  15. Lift the bars from the pan and cut into 18 pieces.
